Head Chef

The head chef is responsible for keeping the unit's kitchen running without interruption and in line with quality and sanitation standards. The work combines menu and supply planning with managing the kitchen staff, and calls for composure at peak load.
Responsibilities
- developing menus and recipe cards based on the products available and nutrition standards;
- controlling product quality at receiving, storage, preparation and issue;
- introducing and following the HACCP food safety standard and sanitary and safety rules;
- planning and monitoring product deliveries, keeping inventory records, optimizing stock and reducing losses;
- managing kitchen staff: selection, training, shift scheduling and monitoring compliance with recipe cards and standards;
- monitoring production processes and equipment condition, requesting maintenance in time and keeping work efficient at peak load;
- reporting on production, costs and quality indicators.
Requirements
- five years or more of experience as a head chef or deputy head chef, or substantial professional experience;
- professional command of different culinary styles;
- knowledge of the HACCP standard, sanitary norms and safety requirements;
- ability to lead a team, plan production, control quality and optimize costs;
- stress resistance, responsibility, organizational skills and precision;
- professional development courses are an advantage;
- relevant certificates are an advantage.
Conditions
- contract service or mobilization; those already in the military can transfer;
- monthly pay from UAH 20,000 to UAH 50,000;
- uniform and meals provided;
- annual leave for service members;
- social guarantees for service members under the law.
